Cauliflower Mashed

The advantage of this recipe is that you get the great benefits of cauliflower and a texture of mashed potatoes. Potatoes are fine- but filled with a lot of starch. This recipe makes it easy to get your vegetables, and if you are having this with chicken - imagine that pan made gravy going into it.

First you need to cook the Cauliflower. You see it in the store as this large plant- it is pretty easy to break down and you can bake it, steam it, but I prefer to microwave it. In fact, often I cheat and just get the microwave pack of cauliflower and just use that.

Ingredients:

One bag of microwaveable cauliflower

1 tablespoon of Extra Virgin Olive Oil (always use US versions of this- the imported is suspect)

2 tablespoons of butter (salted or unsalted is ok)

1 clove of garlic miniced (or one teaspoon of preminced garlic)

1 teaspoon Kosher Salt

Pepper to taste

Hardware you need:

A small food processor-  you can mash these by hand, but it is easier with a food processor

 

First cook the cauliflower in the microwave. 

Put half in the food processor while hot (be careful) and start to puree.

Once creamy add the butter, olive oil,  salt, and garlic and the remaining cauliflower

Puree this until you have the consistency you like (about ten seconds).  

Taste it- add the pepper and more salt if you like.

Serve - 

This is so simple, so easy - and so delicious.
