Roasted Edamame

Edamame has become the snack of skinny people- and unheard of by others. You want a crunchy, but healthy snack? This is it- and it is available at most stores.  I don't often shop in the frozen food section - but this is an exception.  Today these delightful snacks are found in the frozen food section of all major supermarkets

 

1 pound of frozen and shelled edamame

Sea Salt

Freshly Ground Peper

1 1/2 teaspoons of dipping olive oil (or extra virgin)

 

Take the Edamame out of the freezer and place in a colander and allow to thaw.  Pat them dry with a paper towel.

Preheat the oven to 400 F.  Spray a baking sheet with some olive oil

Place the edamame in a large ziplock bag.  Add a couple pinches of sea salt and pepper, and the olive oil.  Shake the bag until all the edamame is coated evenly.  Place evenly on the baking tin and roast in the top part of the oven for an hour - or until there is a golden brown color.

 

This provides a great snack to take on the road, keep handy.
