Did you ever get the urge for something crunchy but didn't want potato chips? Ok- maybe you did want the potato chips, but you thought there has to be another and better tasting chip than this. Well, here they are-- some great baked vegetable chips. You can make them this way- and they are delicious- or you can use a food dehydrator and make some great ones that way. You can use this method with almost any vegetable
2 medium fresh beets
1 medium sweet potato
1 potato (ok, so we put one in for a bit of the old flavor)
1 turnip
1 parsnip
2 tablespoons of olive oil (extra virgin or virgin is not needed)
1/2 teaspoon of Sea Salt
1/2 teaspoon of garlic powder
1/2 teaspoon of dried oregano
Course pepper to taste
I use a kitchen mandolin to slice these into about 1/8 inch after I peel the vegetables. Drizzle with oil and add the remaining ingredients. Tossing them to coat (or put them in a bag with the ingredients and toss to coat)
Arrange in a single layer in a sheet pan (coated with olive oil spray). Bake 375 degrees for 15-20 minutes until brown, turning once.
