This is a great recipe for a party. Instead of having a lot of high calorie items at the buffet table, try to have something small and tasty bits. Plus I really like having bits of classic dishes- even deconstructed!
1 eggplant cut into small pieces
1/4 cup of wheat bran
1/4 cup of aged, grated Parmesan cheese
Italian Seasoning (which is a mix of oregano, basil, thyme, garlic) - I prefer fresh of all of these and use in the mi
Salt and pepper
1 egg
1/4 cup of milk
Mix the egg and milk together
Mix the wheat bran, cheese, and seasonings
Dip the eggplant in the egg/milk then coat with the next.
Place pieces on a cooking pan (silicon or sprayed cookie sheet)
Bake 375 F for 15 minutes
You can have a side dish of Marinara sauce
