Yes- Cactus-- we live in Phoenix- and this is one of the ingredients that is fresh and local and easy to get.
You can obtain this from some of the grocery stores that will have it cleaned and cut. Locally the IGA in Buckeye has it. Or- you can go to your prickly pear cactus, and carefully cut it into small strips.
Sautee the cactus in olive oil and minced garlic. Add some bacon (one cup of cactus with two strips of bacon).
