Cauliflower is one of the easiest vegetables to work with and to make. At a recent support group Madeline brought some for us to taste- so here is her recipe:
1 head of cauliflower
2-3 cloves of garlic, minced (I used pre-minced garlic - 2 tablespoons)
Lemon juice from a whole lemon
Olive oil
Kosher salt
Parmesan cheese
Prehead the oven to 400F. Cut the cauliflower into florets and put into a single layer in a dish. Add the garlic. Squeeze the lemon juice over the cauliflower and drizzer with olive oil. Add salt and pepper to taste. Place in the oven for 25-30 minutes and test with a fork. Remove and sprinkle with Parmesan cheese.
