Joy is our resident salsa queen -- having won several awards for a variety of salsa that she has made. Salsa is an amazing dish - -it allows flavor to a dish with out adding calories.
Just a warning- this is Joy's basic recipe-- her award winning recipes have some secret ingredients in them. But there are a lot of ingredients you can add to any salsa-
Salsa falls into the tradition of fresh vegetables mixed with fruits to add great flavor to a dish and allows a good mix of vitamins.
Here is Joy's basic recipe -- and from this you can experiment:
2 28 ounce cans of crushed tomatoes (Trader Joe's ground tomatoes work well)
6-8 yellow peppers (usually next to jalapenos in stores). Do not take the seeds out
1/2 sweet onion (white onion not yellow--- on the west coast Walla Walla sweets)
6 ounces canned diced green chillies
1 tablespoon of chopped garlic
1/2 tablespoon of salt (or more to taste)
1/2 bunch cilantro (mostly leaves, but some stems)
a bit of fresh squeezed lemon juice
Chop the vegetables and blend with tomatoes and spices. Chill at least three hours. This is a mild salsa that works well with anything.
With all salsa it is best to add the vegetables one at a time to get the consistency.
