Ingredients:
Purchase your favorite brand of Marinara or Tomato sauce.
1/2 pound of Mozzarella - sliced
1/4 cup of grated Parmigiano-Reggiano cheese
Sous Vide Cooked Chicken breasts
Preheat the oven to 400 degrees - and place the rack to the top fourth of the oven
Remove the chicken breasts from the Sous Vide and place in a casserole dish
Cover the chicken breasts with your red sauce
Place Mozzarella medallions on top of the breasts
Sprinkle the grated cheese over the chicken and mozzarella
Place in the oven until the cheese is melted (about 5 minutes)
Then Place the oven on broil and cook until the cheese gets slightly brown (less than 2 minutes)
To complete this meal with a great vegetable - have your sauce in a sauce pan and cooked some spaghetti squash (see vegetable section)
This will be a great meal- without the heaviness of pasta-
