Tidewater Peanut Butter Pie

From Kaye's Kitchen in Ketchikan, Alaska- this is the peanut butter pie that I grew up with.  I'd love to tell you that it is healthy, and has lots of great vitamins and minerals and will prevent cancer, heart disease, and cure arthritis. It doesn't. It just makes life worth living to have a piece of this pie.

 

Ingredients:

1/2 Cup unsalted butter

1/2 cup creamy style peanut butter

3 eggs

2 Tablespoons all purpose flour

1/3 cup light corn syrup

1 cup granulated sugar

1 cup ligh brown sugar, firmly packed

1/3 cup of milk

1 teaspoon vanilla extract

pinch of salt

1 9 inch pie shell, partially baked

 

Melt butter and peanut butter in a small heavy sauce pan over low heat, stirring occasionally. Remove from the heat. Combine eggs, flour, corn syrup, sugar, brown sugar, milk, vanilla, and salt in a large bowl. Mix well.  Blend in the peanut butter mixture. Pour the filling into the pie shell. Bake in a 325 F oven for 1 hour and twenty minutes, or until the filling is puffed. The filling will be soft and loose. Allow the pie to cool to room temperature before serving.
