Egg Salad

Egg Salad is a great source of protein - make it up and it is an easy thing to take with you for lunch, a snack, or even a late night dinner.

So how do you hard boil eggs? It isn't that difficult, but it does take a bit of time. 

Place the eggs in a pan and cover it with cold water until the eggs are covered with one to two inches of cold water.

Boil the water.

Once the water boils - turn off the heat - leave the pan on the stove.

Cover the pan.

Set the timer for 12 minutes

After twelve minutes strain out the hot water and run cold water into the eggs.


The eggs can stay in the refrigerator (cover them) for four days.  But I would peel them (easy to peel under cold water) right away and make the egg salad - below.


12 hard-boiled eggs - mash them. .

then add:

1/3 cup of Real Mayonnaise

3 Tablespoons of Dijon mustard

1/2 teaspoon of paprika


Mix the mayo, mustard, and paprika until well blended.



Cover the mix and place in the refrigerator.  Allow at least one hour before serving.
